Vegan Rocky Road
- 180g vegan milk chocolate buttons, or chopped vegan milk chocolate
- 150g Only Mine vegan dark chocolate buttons (Can use all dark or all milk)
- 75g packet vegan and gluten-free mini marshmallows (or chopped larger ones such as Dandies Marshmallows, lightly flouring with cornflour to stop the pieces sticking)
- handful of cashews
- 120g packet Red Balloon Jelly Cubes, chopped (lightly floured with cornflour to stop the pieces sticking together)
1. Mix marshmallows, chopped Jelly Cubes and cashews together in a bowl.
2. Line a tray with baking/parchment paper.
3. Melt chocolate in a microwave using 20 second bursts and stirring between each with a metal spoon, until melted.
4. Working quickly, stir chocolate through marshmallow/cashew/jelly cube mixture. Pour into prepared tray and smooth over.
5. Allow to cool before cutting into squares using a hot knife.
