Roasted Veggies with Hummus
- 1 zucchini, cut into 1cm thick rounds, halving if your zucchini is large
- 1 carrot, sliced then halved
- 1 head broccoli, cut into florets
- 1 sweet capsicum, sliced
- 200g mushrooms, halved or quartered, depending on size
- 200g grape or cherry tomatoes
- 1 tablespoon oil
- Smoked paprika
- Sea salt
- 1 cup hummus
- Chopped parsley
Garlic Pita Bread:
- 2 small pita breads, I used gluten-free
- 2 teaspoons olive oil
- 1 garlic clove, crushed
- 1 teaspoon Nutritional (Savoury) Yeast Flakes (optional)
- Pinch if sea salt
1. Place the zucchini, carrot and broccoli in a bowl. Toss with oil. Generously sprinkle with smoked paprika. Sprinkle with a little salt. Toss again to coat.
2. Place in an air fryer and roast at 200°C for around 25 minutes, tossing occasionally and adding the tomatoes for the last 10 minutes.
3. To make the garlic pita bread, mix the oil, garlic, yeast flakes and salt together in a bowl. Spread over pitas and cook in the air fryer or grill for around 5 minutes.
4. Place the hummus in the bottom of serving bowls. Top with roasted veggies. Sprinkle with a little smoked paprika and chopped parsley. Serve with the garlic pita bread.
