Lazy Days Veggie Burgers & Fresh Salsa
This is my go-to meal after a long day or for those days when I just can’t be bothered. Fresh, tasty and only 10 minutes to make.
- 2 Roast Carrot, Kale & Chickpea Burger Patties (1 pack)
- 1 avocado
- 150g grape or cherry tomatoes
- 125g canned corn kernels
- Balsamic vinegar
- Freshly cracked black pepper
1. Cook the patties in the air fryer for 10 minutes at 200°C. (Alternatively, cook as per pack instructions.)
2. While the burgers are cooking, peel and dice the avocado and cut the tomatoes into quarters. Place in a bowl and add the drained corn kernels. Add a generous amount of black pepper and a good splash or two of balsamic. Gently mix together to make a fresh salsa.
3. Place the cooked burgers onto plates and spoon over the salsa. Serve.
