Choc Banana Chia Pudding

Almond Milk:

  • 1 cup raw almonds, soaked for a day or overnight
  • 3 1/2 cups water
  • 2 medjool dates
  • pinch salt

Flavourings:

  • 2 to 3 bananas, depending on size 
  • 4 medjool dates
  • 1/4 cup raw cacao
  • 8 teaspoons maca powder (optional)
  • 1 teaspoon vanilla extract, or seeds from 1 vanilla pod

Seeds:

  • 1/2 cup + 2 tablespoons chia seeds

 

1. In a blender, process Almond Milk ingredients on the fastest speed until completely smooth.

2. Add flavourings and process on the fastest speed until very smooth.

3. Add chia seeds mix evenly through by hand 

4. Pour into mason jars to around 3/4 of the way up the jar. Place in fridge and allow to cool completely (mixture will be slightly warm due to the blending) before placing lids on the jars. Chill for several hours or overnight.

Serve topped with fresh fruit, chopped nuts, vegan yogurt or whatever else takes your fancy.

 

Makes around 6 serves.
